Butter 5 oz. 10 Tbsp.
Dried apricots, small dice 10 oz. 2-1/2 cups
Dried cranberries, small dice 10 oz. 2-1/2 cups
Dried pears, small dice 10 oz. 2-1/2 cups
Brown sugar 5 oz. 10 Tbsp.
Port wine 20 oz. 2-1/2 cups
Walnuts, chopped, toasted 10 oz. 2-1/2 cups + garnish
TABASCO® brand Original Red Sauce 1-1/2 oz. 3 Tbsp. + garnish
Apples, cored 12 ea.
Cinnamon and sugar blend as needed
Caramel sauce 30 oz. 3 cups


  1. To prepare the fruit stuffing, melt butter; add apricots, cranberries and pears; sauté for 2 minutes. Add sugar and port; reduce until thick. Stir in walnuts and TABASCO® Sauce. Hold until needed.
  2. To assemble the apples, stuff each with 3-1/2 oz. fruit stuffing. Place apples on a sheet pan, dust with cinnamon and sugar blend. Bake in a 350°F oven for 10 minutes until tender.
  3. For each serving, place 1 apple on a plate topped with 2-1/2 oz. caramel sauce. Garnish with chopped walnuts and TABASCO® Sauce around the rim of the plate.
