Ingredients Weight Measure
Eggs, slightly beaten 5 ea.
Milk 1-1/4 cups
Cornmeal 1 lb. 1-1/2 pts.
All-purpose flour 12 oz. 1-1/2 pts.
Medium shrimp, shelled, deveined, or shucked oysters 6 lbs.
Vegetable oil for frying
Mayonnaise 1-1/2 pts.
Garlic, minced 5 cloves
TABASCO® brand Original Red Sauce 1 Tbsp.
Hero rolls (about 6" long) 24
Lettuce, shredded 2 lbs. 2 qts.
Tomatoes, cut in slices 3 lbs. 6 ea.


  1. In small bowl, combine eggs and milk.
  2. In shallow pan, combine cornmeal and flour.
  3. Dip shrimp or oysters in egg mixture.
  4. Deep-fry in hot oil (350°F or 375°F) until golden. Drain on paper towels.
  5. Combine mayonnaise, garlic and TABASCO® Sauce.
  6. Slice 1" off end of hero roll. Scoop out soft insides. Spread inside of roll with mayonnaise mixture. Spoon in shrimp (or oysters), lettuce and tomatoes. Serve hot.
