Ingredients Weight Measure
Pork loin, boneless 3 lbs.
Jerk seasoning 3 Tbsp.
Zucchini, sliced 1/4" thick 12 oz. 3 cups
Onion, minced 3 oz. 3/4 cup
Red pepper, diced 3 oz. 3/4 cup
TABASCO® Mango Island Salsa 17 oz. 1x recipe
Flour tortilla, 12", grilled 12 ea.
White rice, cooked 24 oz.


  1. Rub pork loin with jerk seasoning. Roast in a pre-heated 425°F. oven for 15 minutes. Let meat rest for 5 minutes. Slice roast into thin medallions, and then julienne. Cool, cover and refrigerate until needed.
  2. To prepare wrap filling, sauté zucchini, onions, and red peppers in pre-heated sauté pan. Cool, cover and refrigerate until needed.
  3. For each serving, spread 3/4 of 1 tortilla with 3 Tbsp. TABASCO® Mango Island Salsa. Top with 1-1/2 oz. wrap filling, 3 oz. pork, and 2 oz. white rice. Roll up tightly, ending with uncovered portion of the tortilla.
