ROASTED TOMATO & SUN-DRIED TOMATO SALSA

Ingredients Weight Measure
Roma tomatoes 12 ea.
Olive oil 1/4 cup
Salt and pepper to taste
Garlic, roasted 1 Tbsp.
Cucumber, peeled and seeded, small dice 3/4 cup
Green pepper, small dice 3/4 cup
Sun-dried tomato, chopped (oil-packed) 1/2 cup
Salt and pepper to taste
TABASCO® brand Original Red Sauce 1/2 cup

Method

  1. Roast tomatoes in oven with olive oil, salt and pepper at 500°F for 40 minutes, or until done.
  2. Place tomatoes and roasted garlic in a food processor and puree to a fine slurry.
  3. Combine all ingredients and season with salt and pepper, to taste. Hold refrigerated until ready to serve.

Yield: 1 quart
