GREEN-EYED SALSA

Ingredients Weight Measure
Granny Smith apples, medium, cored and finely diced 12 ea.
Green peppers, medium, seeded and finely diced 12 ea.
Red peppers, small, seeded and finely diced 12 ea.
Green onions, sliced 12 ea.
Lime juice 1-1/2 cups
TABASCO® brand Green JalapeƱo Pepper Sauce 1 cup
Fresh parsley, chopped 3/4 cup
Capers, small 3/4 cup
Extra virgin olive oil 3/4 cup
Sugar 2 Tbsp.
Salt 1 Tbsp.

Method

  1. In a medium bowl, combine all ingredients until well blended. Cover and refrigerate up to 5 days. Serve with grilled chicken, fish or tortilla chips.

Yield: 1-1/2 gallons
