Papaya-Mango Vinaigrette

Mango puree 2 cups
Papaya puree 1 cup
Marmalade 1 cup
White balsamic vinegarx09 3/4 cup
TABASCO® brand Habanero Sauce 1-1/2 Tbsp.
Salt 1 tsp.

Jerked Chicken Salad

Roasted sweet potatoes, cut into 1/2" cube 3-1/2 cups
Light jerk seasoning
Sugar
Mixed field greens (mixed 25% with iceberg lettuce) 5 qts.
Grilled onions, diced 1-3/4 cups
Grilled yellow and zucchini squash, chilled and cut in bite-sized pieces 3-1/2 cups
Plum tomatoes 7 ea.
Jerk grilled chicken, cut into 1/2" dicex09 42 oz.
Banana chips 1-3/4 cups

Method

  1. To prepare the Papaya-Mango Vinaigrette, combine all ingredients. Mix well and hold refrigerated for service.
  2. Season sweet potatoes with light jerk seasoning and sugar
  3. To assemble each salad, top greens with vegetables and chicken. Pour 6 oz. Papaya-Mango Vinaigrette over top.

Yield: 6 or 7 salads
