SPICY PECAN & PEACH CHICKEN SALADS

Ingredients Weight Measure
Mayonnaise 3 oz. 1/3 cup
White vinegar 2 oz. 1/4 cup
Sugar 1 oz. 2 Tbsp.
TABASCO® brand Original Red Sauce 1/2 oz. 1 Tbsp.
Salt 1/2 tsp.
Pepper 1/2 tsp.
Chicken, grilled, diced 5-1/2 oz. 1 cup
Pecans 2-1/2 oz. 1/2 cup
Peaches 8 oz. 1 cup
Mixed greens 10 cups

Method

  1. To make the dressing, combine mayonnaise, vinegar, sugar, TABASCO® Sauce, salt and pepper. Blend well.
  2. Toss chicken, pecans and peaches with dressing.
  3. For each serving, place 2 cups greens on a plate. Top with 3/4 cup tossed chicken mixture.

Yield: 5 servings
