Water 24 oz. 3 cups
Bourbon 16 oz. 2 cups
Maple syrup 16 oz. 2 cups
Salt 1 oz. 2 Tbsp.
Poultry seasoning 2 oz. 4 Tbsp.
Pepper 1 Tbsp.
TABASCO® brand Original Red Sauce 1 cup
Turkey, young 12 lbs.
Water 1 cup
Hickory wood chips 1 cup


  1. To make brine, combine water, bourbon, maple syrup, salt, seasoning, pepper and TABASCO® Sauce. With brining needle, inject turkey with brine. Allow to marinate for 12-14 hours.
  2. Place 1 cup water and wood chips in bottom of smoking pan. Place rack in bottom of pan. Cover rack with aluminum foil. Place turkey in pan and cover tightly.
  3. Place pan on stove over medium-high heat for 8 minutes, then place pan in a 350°F oven for 2-3 hours. Remove and check internal temperature. Finish uncovered until a 165°F internal temperature is reached.

Yield: 1 turkey
