BUFFALO TACO MEAT

Ingredients Weight Measure
Onions, diced 2 cups
Green peppers, diced 4 cups
Vegetable oil 1/2 cup
Regular grind buffalo 5 lbs.
Coarse grind buffalo 5 lbs.
Water 6 cups
Chili powder 1/4 cup
Cumin 4 Tbsp.
Granulated garlic 2 Tbsp.
TABASCO® brand Buffalo Style Hot Sauce 1/2 cup
Salt 3 Tbsp.
Refried beans 16 oz.

Method

  1. Place onions and green peppers in a large brassier and sauté in vegetable oil over medium-high heat until onions caramelize.
  2. Place buffalo meat, water and all the seasonings, including the TABASCO® Buffalo Style Hot Sauce, in the pan.
  3. With a wire whip, break up the meat until it is loose.
  4. Add the refried beans and bring to a simmer.
  5. Braise the buffalo taco meat for about 2 to 3 hours over a low heat or until the meat is tender and the sauce has thickened.
