BUFFALO HOT CHICKEN UNDER A BRICK

Ingredients Weight Measure
Chicken halves, 1-1/2 lbs, flattened 12 each
Garlic, minced 3 oz.
Italian dressing 12 cups
Salt 2 Tbsp.
TABASCO® brand Buffalo Style Hot Sauce 3 cups

Method

  1. Flatten chicken halves with hands or pound briefly with flat side of meat cleaver. Mix all ingredients, except the chicken, in a large bowl with a whisk. Place 2-3 chicken halves in a zip top bag or similar food service bag. Divide up marinade into each bag, covering chicken. Marinate overnight.
  2. Preheat oven to 425 degrees. Place chickens, lifted out of marinade, on a foil lined roasting dish or baking sheet, to accommodate all halves without overlapping.
  3. Cover chicken halves with foil. Place a large baking sheet on top of chicken halves and weigh down with bricks or a cast iron skillet to press chicken down.
  4. Roast until done, about 45 minutes. Remove bricks, baking sheet and foil.

Yield: 12 servings

Serve with French fries or onion rings, and a green or Caesar salad.
