FEIJOADA LATIN STYLE

Ingredients Weight Measure
Black beans 2 lbs.
Water 3 qts.
Ham cubes 3/4" cubes 2 lbs.
Pork loin, 3/4" cubes 4 lbs.
Italian sausage links, 1" pieces 2 lbs.
Cherry tomatoes, cut in half 1 qt.
Onions, chopped 2 ea.
TABASCO® brand Original Red Sauce 1/2 cup
Garlic cloves, minced 12 ea.
Orange zest 1/4 tsp.
Salt and pepper to taste

Method

  1. Cover beans with cold water and soak overnight, or cover them with boiling water and let stand for 2 hours; drain.
  2. Preheat oven to 275°F. In a large braiser that has a lid, combine remaining ingredients except salt and pepper. Bring to boil, skimming if necessary. Cover and transfer to oven.
  3. Bake for 4 hours; remove cover and bake for 30 minutes longer, stirring occasionally. Season with salt and pepper. Allow to cool slightly; then cover and refrigerate overnight.
  4. Remove any fat from the surface. Reheat the feijoada slowly for service.

Yield: 24 servings

Serving idea: Serve over white or yellow rice.
