MCILHENNY MUSTARD SAUCE

Ingredients Weight Measure
Vegetable oil 4 oz.
Onions, sliced 12 oz.
Vegetable stock 12 oz.
Creole mustard 6 oz.
TABASCO® brand Garlic Pepper Sauce 4 Tbsp.
Whole butter 10 oz.
Salt and pepper to taste

Method

  1. Heat oil in a sauté pan, add onions and caramelize until golden brown. Add stock and cover pan.
  2. Reduce heat and simmer.
  3. Add mustard and whisk until mustard is incorporated well.
  4. Add TABASCO® Garlic Sauce, remove from the heat and whisk in the butter; season with salt and pepper.
  5. Hold warm.
