GIBOUT'S WARM POTATO SALAD

Ingredients Weight Measure
Creamer potatoes, boiled, warm 4 lbs.
Bacon, chopped 12 oz.
Onions, minced 24 oz.
Garlic, minced 12 oz.
Chicken glaze 6 oz.
Green onions, sliced thin 24 oz.
Worcestershire sauce 1-1/2 Tbsp.
TABASCO® brand Original Red Sauce 2 oz.
Salt and pepper to taste

Method

  1. Slice cooked potatoes into 1/4"-thick rounds; hold warm.
  2. Sauté bacon until crispy, keeping all the bacon fat in the pan.
  3. Add onions and garlic and sweat until translucent.
  4. Add glaze, green onions, Worcestershire sauce and TABASCO® Sauce; toss into warm potatoes and hold warm for 15 minutes.
  5. Add salt and pepper.

Yield:
