SPICY SOUTHWEST CHEESEBURGERS WITH GRILLED ONION WITH PICO DE GALLO AND TORTILLA CHIPS

Grilled Onions

Yellow onions, large, each cut into 4 thick slices 12 slices
Vegetable oil 1/4 cup
TABASCO® brand Garlic Pepper Sauce 1 Tbsp.
Salt and pepper to taste

Pico de Gallo

Ingredients Weight Measure
Roma tomatoes, seeded, sliced 9 ea.
Red onion, minced 1 ea.
Cilantro, chopped 2 Tbsp.
JalapeƱos, seeded, minced 2 ea.
Lime juice, fresh to taste
TABASCO® brand Garlic Pepper Sauce 4 Tbsp.
Salt and pepper to taste

Cheeseburgers

Ingredients Weight Measure
Ground beef, approximately 80% lean 6 lbs.
Cumin 2 Tbsp.
Cayenne pepper 1 Tbsp.
TABASCO® brand Garlic Pepper Sauce 4 Tbsp.
Pepper Jack cheese, shredded 2 cups
Salt and pepper to taste
Hamburger buns, lightly toasted 12 ea.
Tortilla chips 1 bag

Method

  1. To make Grilled Onions, toss onion slices in oil, TABASCO® Garlic Pepper Sauce, salt and pepper; place on grill and cook until slices are tender, flipping after about 2 minutes. Brush onions with oil before removing them from the grill.
  2. To make Pico de Gallo, combine tomatoes, onions, cilantro, jalapeƱos, lime juice, TABASCO® Garlic Pepper Sauce, salt and pepper; refrigerate until service.
  3. To make Cheeseburgers, combine ground beef, cumin, cayenne, TABASCO® Garlic Pepper Sauce and cheese; shape into 12 equal-sized patties; season them with salt and pepper and grill to desired doneness. Serve burgers with grilled onions on buns with chips and salsa.
