Whole chickens, 3 lbs. ea. 6 ea.
TABASCO® brand Original Red Sauce 8 oz. 1 cup
Dry white wine 36 oz. 4-1/2 cups
Olive oil 3 oz. 1/3 cup
Onions, finely minced 12 oz. 3 cups
Garlic, finely minced 3 oz. 1/3 cup
Shallots, finely minced 6 oz. 1 cup
Bay leaves, crumbled 9 leaves
Hot paprika 3 Tbsp.
Kosher salt 3 Tbsp.
Freshly ground black pepper 1 Tbsp.
Cornstarch 1 oz. 1/4 cup
Cold water 1/2 cup


  1. Cut chickens in half, removing the backbone. Remove the cavity and breastbones and the bone from the first joint of the thigh.
  2. In a large bowl, combine the TABASCO® Sauce, white wine, olive oil, onions, garlic, shallots, crumbled bay leaves, paprika, salt and pepper. Lay chicken halves, skin-side up, in a single layer, in a large pan. Pour the marinade over the chicken, rubbing in well, cover and refrigerate overnight.
  3. Preheat oven to 550°F. Remove chickens from the marinade, reserving the marinade, and lay chickens in a single layer on sheet pan. Roast 15 minutes or until the chickens are nicely browned. Brush the chickens once or twice with a little marinade. Reduce the oven heat to 400°F and continue cooking the chickens for another 10 to 15 minutes until the juices run clear when pricked in the thickest part of the thigh. Remove to a platter and keep warm. Pour off pan juices and degrease. Set aside.
  4. While the chickens are roasting, strain the reserved marinade and discard the vegetables. Pour the strained marinade into a saucepan, bring to a boil, reduce by about 1/4 over high heat. Add pan juices and continue cooking another 5 to 10 minutes. Mix the cornstarch with cold water. Stir to mix well. Whisk the cornstarch mixture into the sauce, bring to a simmer and cook for 1 minute to thicken the sauce. Adjust seasoning.

Yield: 12 servings

Serving idea: Arrange the chicken halves on individual plates on a mound of rice, mashed potatoes or couscous. Garnish with greens. Drizzle a little TABASCO® sauce over the chicken and pour 1 to 2 tablespoons on the plate. Additional sauce may be served on the side.
