SUNSET SASSY GRITS

Ingredients Weight Measure
Water 120 oz. 3-3/4 qts.
Quick cooking grits 24 oz. 3 cups
Kosher salt 1-1/2 oz. 3 Tbsp.
Unsalted butter 1-1/2 oz. 3 Tbsp.
2% milk 2 oz. 1/4 cup
TABASCO® brand Original Red Sauce 1 oz. 2 Tbsp.
Black pepper, coarsely ground 1/4 oz. 1-1/2 tsp.
Onion powder 1-1/2 oz. 3 Tbsp.
Paprika 1 oz. 2 Tbsp.
Garlic, minced 2 oz. 4 Tbsp.
Red pepper flakes 1/8 oz. 1/2 tsp.
Sun-dried tomatoes, diced 3 oz. 1/3 cup
Cilantro, chopped 2 oz. 1/4 cup
Basil, dried 1 oz. 2 Tbsp.
Cheddar cheese, shredded 2 oz. 1/4 cup

Method

  1. Boil water; add grits, salt and butter.
  2. When grits begin to thicken, add remaining ingredients and stir gently until all are incorporated into grits.
  3. Remove from heat. Grits can be garnished and served immediately in a bowl.
  4. Or, place grits in a mold and let cool (approximately 10-15 minutes).
  5. Unmold and garnish. Serve cold or reheated.
