DULCES DE NARANJA (Orange Candy)

Ingredients Weight Measure
Sugar 3 cups
Water 1/4 cup
Evaporated milk, undiluted 1 cup
TABASCO® brand Habanero Sauce 1 Tbsp.
Salt dash
Orange peel, grated 2 tsp.
Black walnuts, chopped 1 cup

Method

  1. Put 1 cup sugar into a heavy skillet and stir slowly with a wooden spoon over medium heat until the sugar is melted and caramelized to a golden brown color. Add the water and stir until the sugar is completely dissolved. Add the remaining 2 cups sugar, evaporated milk, TABASCO® brand Habanero Sauce and salt. Place over low heat and stir constantly until the mixture boils. Cook, stirring frequently, until it reaches the soft ball stage (236°F).
  2. Remove from heat; cool to lukewarm. Do not stir.
  3. Add the orange peel and nuts. Beat vigorously until the candy loses its gloss and holds its shape when dropped from a spoon.
  4. Spoon into bite size pieces on a sheet pan with a paper liner.

Yield: 32 servings

Serving idea: great garnish for desserts and may be cut or made into smaller pieces for a garnish in salads.
