So-Hot Marinade

Soy sauce 2 cups
Sesame oil 1 cup
TABASCO® brand Original Red Sauce 1/2 cup
Ahi Tuna, triangle cut, to be marinated 4 oz. 15 ea.
Salt to taste

Green TABASCO® (Jalapeño)–Jicama Salad

TABASCO® brand Green Jalapeño Pepper Sauce 4 Tbsp.
Rice wine vinegar, mild 3/4 cup
Olive oil 1/4 cup
Parsley, chopped 1/4 cup
Salt 4 tsp.
Jicamas, 1/8 30 oz.
Red bell peppers, 1/8 15 oz.
Yellow bell peppers, 1/8 15 oz.

Red TABASCO®–Lime–Infused Sour Cream

TABASCO® brand Original Red Sauce 1-1/2 Tbsp.
Sour cream 1 cup
Lime juice 1 tsp.
Chives, for garnish 30 ea.
Lime, half slices 4 ea.

Method

  1. To prepare So-Hot Marinade, combine soy sauce, sesame oil and TABASCO® Original Red Sauce in a stainless steel bowl and whisk with a wire whip until blended. Set aside until ready to use. Marinate the tuna in mixture for 10-15 minutes before searing.
  2. To prepare Green TABASCO® (Jalapeño)–Jicama Salad, place TABASCO® Green Jalapeño Pepper Sauce, rice wine vinegar, olive oil, parsley and salt in a mixing bowl and whisk with wire whip until evenly blended. Add rest of the ingredients and gently toss to mix. Set aside for later use.
  3. To prepare Red TABASCO®–Lime–Infused Sour Cream, combine all of the ingredients in a mixing bowl and whisk with a wire whip until evenly blended. Set aside for later use.
  4. Final preparation: Season the marinated tuna portions lightly with salt and place in preheated sauté pan when oil is hot. Sear the tuna for approximately 1 minute on each side. The center of the tuna needs to be cool and rare.
  5. For each serving, place 3 oz. Green TABASCO® (Jalapeño)–Jicama salad in the center of a 12" plate.
  6. Cut each tuna portion into 4-5 slices and place on top of salad.
  7. Place 2 half slices of lime on each side of the tuna. Top each of the lime slices with 1/2 Tbsp. of the Red TABASCO®–Lime–Infused Sour Cream.
  8. Garnish the dish with 2 chives.

Yield: 15 servings
