PORT AUTHUR POTATO SALAD

Salad

Ingredients Weight Measure
Potatoes, large, baked, peeled, cut into 1" cubes 10 ea.
Celery, diced 3 cups
Red onions, diced 1-1/2 cups
Red bell peppers, diced 2 ea.
Cilantro, chopped 1 cup
Hard boiled eggs, chopped 5 ea.

Dressing

Ingredients Weight Measure
Mayonnaise 2 cups
Sour cream 1 cup
Cumin, ground 2 Tbsp.
TABASCO® brand Original Red Sauce 4 Tbsp.
Lime juice 1-1/2 Tbsp.
Garlic, minced 1 Tbsp.
Salt and pepper to taste

Method

  1. Combine all Salad ingredients in a large bowl.
  2. Whisk all Dressing ingredients together and adjust seasonings.
  3. Toss dressing with salad and chill.

Yield: 12 servings
