BOMBA! PASTA TOSS SAUCE OR HOT DIPPING SAUCE

Ingredients Weight Measure
Pickled sweet peppers 2 oz. 1/2 cup
Sun-dried tomatoes, plumped and drained 3 oz. 1/2 cup
Canned mushroom pieces 4 oz. 3/4 cup
Canned artichokes 12 oz. 1-1/2 cups
Canned carrots 6 oz. 1 cup
Stuffed green olives 6 oz. 1 cup
TABASCO® brand Original Red Sauce 4 oz.
Garlic, minced 2 oz.
White vinegar 2 oz.
Lemon juice 1 oz.
Salt 1-3/4 oz.
Paprika 4 tsp.
Cayenne 2 tsp.
Vegetable oil 5 cups

Method

  1. Place all ingredients, except oil, into a large food processor. Process until finely minced but not quite a paste.
  2. Heat oil to warm; then in a large bowl, toss oil with ground vegetables and spices.
  3. Cool, refrigerate. re-heat and toss with pasta or fried wedges of pizza dough or use as a dipping sauce for crostini, baguette slices or foccaccia.

Yield: 12-20 servings
