Sesame oil 1/2 cup
Arborio rice 2 cups
White onion, small diced 1 ea.
Salt 1 tsp.
Black pepper 1 tsp.
Beef broth 2 qts.
Cayenne pepper pinch
TABASCO® brand Original Red Sauce 40-50 light shakes
Titi shrimp 2-1/2 cups
Italian sausage links, cooked and sliced 5 each
Parmesan or mozzarella cheese, optional as topping


  1. Heat oil in pan on high heat and let it get hot. Turn heat down to medium and add rice. Cook rice for 10 minutes, stirring constantly.
  2. Add onions and cook for 5 more minutes before adding salt and pepper. Cook for 5 to 8 more minutes or until rice starts to give off a toasted smell. Remember to keep stirring. At this point, add the broth, 1/2 to 3/4 cup at a time. Add more liquid only after each portion is absorbed. After half of the broth is used, add cayenne pepper, TABASCO® Sauce, shrimp and sausage to the rice. Continue adding the broth. Taste rice when three-fourths of the broth is absorbed. Adjust seasoning.
  3. When rice is done, serve, adding optional cheese topping if desired.

Yield: 12 4-oz. portions
