SOUTHWESTERN CALAMARI WITH ORANGE MARMALADE AIOLI

Ingredients Weight Measure
Buttermilk 2 cups
TABASCO® brand Chipotle Pepper Sauce 1/2 cup
Squid, cleaned, cut into rings 2 lbs.
Eggs, beaten 6 ea.
Flour 2 cups
Cornmeal 2 cups
Orange marmalade 2 Tbsp.
Mayonnaise 1 cup

Method

  1. Mix buttermilk and 1/4 cup TABASCO® Chipotle Pepper Sauce together; blend well.
  2. Place squid in buttermilk mixture and marinate 12-24 hours in refrigerator.
  3. Mix remaining TABASCO® Chipotle Pepper Sauce with eggs; blend well.
  4. Remove squid from buttermilk, bread squid in flour, then egg, then cornmeal.
  5. Deep-fry in 375°F oil for 30-45 seconds.
  6. Combine marmalade and mayonnaise; blend well. Serve as a dipping sauce.

Yield: 1 platter
