CHIPOTLE AHI TUNA WITH LEMON OIL AND SEA SALT

Ingredients Weight Measure
Ahi tuna, loin, sushi grade 1 lb.
TABASCO® brand Chipotle Pepper Sauce 1/4 cup
Olive oil 1 Tbsp.
Endive greens, chiffonade cut 2-1/2 cups
Lemon oil as needed
Sea salt, coarse ground as needed

Method

  1. Coat tuna with TABASCO® Chipotle Pepper Sauce and marinate for 1-2 hours.
  2. Heat oil in sauté pan to smoke point. Sear tuna on all sides and remove.
  3. Allow tuna to cool; then slice thinly about 1/4" thickness.
  4. Place 1/2 cup of endive leaves on each plate and place slices of tuna around endive.
  5. Drizzle with lemon oil and lightly salt to serve.

Yield: 5 3-oz. servings
