TABASCO® brand Original Red Sauce 2 cups
Vegetable oil 1/2 cup
Portobello mushrooms, cleaned 12 ea.
Salt and pepper as needed
Sourdough bread, thick cut 24 slices
Butter, unsalted as needed
Jalapeño Jack cheese, sandwich cut 24 slices
Salsa, prepared 3/4 cup
Vegetable oil (to brush on bread) as needed


  1. In a large stainless steel bowl, combine TABASCO® Sauce and vegetable oil. Place portabello mushrooms in a 2" deep hotel pan and pour mixture over top. Marinate for up to 1 hour.
  2. Remove mushrooms from marinade, reserving marinade. Blanch mushrooms on grill and return to marinade for 1 hour.
  3. For each sandwich, assemble with bread, cheese slice, mushroom, salsa, cheese slice and bread slice. Brush exterior of bread with oil and place on 350°F griddle, cooking 4-5 minutes or until golden brown. Turn and cook until cheese is melted through. Cut and serve.

Yield: 12 sandwiches
