CRAB AND SHRIMP SCALLOPED POTATOES

Ingredients Weight Measure
Russet potatoes, sliced, 1/4" cross cut 2 lbs.
Shrimp, raw, peeled and deveined 2 cups
Crabmeat 1 cup
Scallions, chopped 1/2 cup
Half-and-half 2 cups
Eggs 3 ea.
Cheddar cheese, shredded 2 cups
TABASCO® brand Original Red Sauce 1 Tbsp.
Breadcrumbs 1 cup

Method

  1. Layer potatoes, shrimp, crab and scallions to fill a 9"x13"x2" baking pan.
  2. Mix half-and-half, eggs, cheese and TABASCO® Sauce in a bowl and pour over layered potatoes and seafood.
  3. Top with bread crumbs and bake at 350°F for 35-40 minutes until golden brown and bubbly.
  4. Be sure to check that the center is 170°F.
