SPICY TROPICAL FRUIT WITH TEQUILA ORANGE SAUCE

Orange Sauce

Tequila 1/4 cup
Orange juice concentrate 2 Tbsp.
Water 1/4 cup
TABASCO® brand Original Red Sauce 2 large dashes
Lime juice Juice of 1/2 lime
Sugar 1/4 cup

Salad

Jicama 1 small
Cantaloupe 1/2 ea.
Avocados, divided 2 ea.
Papaya 1 ea.
Kiwis 2 ea.
Red bell pepper 1 ea.
Mango 1 ea.
Pineapple 1/2 ea.
Lime juice Juice of 2 limes
Honey 1 Tbsp.
TABASCO® brand Original Red Sauce 2 large dashes
Salt 1 pinch
Vanilla or plain yogurt 1 individual-sized container

Garnishes

Coconut, unsweetened (large flake or fresh) as needed
Kumquats, whole, ripe as needed

Method

  1. In saucepan, combine all ingredients for Orange Sauce. Over medium-low heat, let reduce to syrup. Sauce should coat the back of a spoon. Adjust heat to taste.
  2. For Salad, medium dice fruit in different shapes. Dice only 1 avocado, reserve the second for garnish. Hold aside mangoes, kiwis and avocados. These will be tossed in last so that they do not break up when adding dressing.
  3. Toss fruit with the lime juice, honey, TABASCO® Sauce and salt.
  4. Fold in the yogurt. Drizzle generously with sauce. Gently fold in mangoes, kiwis and avocados.
  5. Sprinkle with unsweetened coconut. Drizzle remaining sauce over fruit.
  6. Cut reserved avocado into fans. Garnish fruit with avocado fans and ripe kumquats.
