Ingredients Weight Measure
Bacon, uncooked 48 oz.
Red potatoes, medium 8 ea.
Onion, large 1 ea.
Olive oil 4 Tbsp.
Salt 1/2 tsp.
Pepper 1-1/2 tsp.
Flour 6 Tbsp.
Whipping cream 4 cups
Milk 2 cups
TABASCO® brand Garlic Pepper Sauce 4 Tbsp.
Cheddar cheese, shredded 3 cups
Sour cream, for garnish 1/4 cup
Chives, fresh, chopped, for garnish 1 oz.


  1. Bake bacon at 375°F until crispy; crumble.
  2. Peel and cut potatoes into 1" cubes.
  3. Put potatoes in pot in water to cover; cook until tender.
  4. Drain and set aside.
  5. Mince onion.
  6. In a separate pot, sauté onions in olive oil until translucent.
  7. Add salt, pepper and flour. Stir until mixed thoroughly.
  8. Let sit for 2 minutes.
  9. Add cream and milk.
  10. Stir in TABASCO® Garlic Pepper Sauce.
  11. Add potatoes, bacon and cheese.
  12. Cover and simmer for 30 minutes at medium-low heat, stirriing occasionally.
  13. Plate in bowls and garnish each with 1 Tbsp. sour cream and fresh chives.
