CAJUN BEAN SOUP

Ingredients Weight Measure
Water 3 qts.
Bean soup mix (15-bean, or any combination available) 1 lb.
Chicken base (or 2 chicken bouillon cubes) 1 Tbsp.
Mild Italian sausage, bulk 1 lb.
Onion, large, chopped 1 ea.
Celery stalks, chopped 3 ea.
Garlic, minced 3 cloves
Bell pepper, large, chopped 1 ea.
TABASCO® brand Habanero Sauce 1/4 cup
Canned tomatoes, diced 32 oz.
Salt to taste
Pepper to taste

Method

  1. Bring water, beans and chicken base to a low boil for 70 minutes.
  2. In a separate soup pot, brown the sausage.
  3. Stir in onions, celery, garlic, and green peppers; cook until tender.
  4. Add sausage mixture to the pot of cooked beans and bring back to a boil.
  5. Add TABASCO® Habanero Sauce and tomatoes; simmer five minutes.
  6. Add salt and pepper.
  7. Serve as a main dish or as an appetizer with fresh bread and extra TABASCO® Sauces for those who prefer more heat.
