ROASTED TOMATO & SUN-DRIED TOMATO SALSA

Cucumber, peeled and seeded, small dice
3/4 cup
Green pepper, small dice
3/4 cup
Sun-dried tomato, chopped (oil-packed)

Method

Roast tomatoes in oven with olive oil, salt and pepper at 500
°
F for 40 minutes, or until done.

Place tomatoes and roasted garlic in a food processor and puree to a fine slurry.

Combine all ingredients and season with salt and pepper, to taste. Hold refrigerated until ready to serve.
