In a heavy-bottomed sauté pan, heat oil until smoking. Add onions and cook until golden brown. Add garlic and orange zest and cook 1 minute more; then add all remaining ingredients except chicken and orange wedges. Cook until steamy and then immediately pour over wings to marinate for 1 hour.

Grill wings to impart flavor and "mark"; then remove.

Add wings back to sauce and place wings in oven until an internal temperature of 165°F is reached. Serve topped with additional sauce and an orange wedge.
