MAC 'N CHEESE SOUFFLÉ

 Ingredients Weight Measure
      
 Butter
4 oz.
 Half-and-half

1 cup
 Processed cheese
1 lb.
 Cheddar cheese, shredded
8 oz.
 Original TABASCO® brand Pepper Sauce

2 Tbsp.
 Eggs

3 ea.
 Macaroni, cooked
2 lbs.
 Breadcrumbs

1 cup

Method

1Make cheese sauce by placing butter in a double boiler and melting.
2Add half-and-half, processed cheese, cheddar cheese and Original TABASCO® Pepper Sauce. Bring to boil and remove from heat. Let cool for 15 minutes.
3In a mixing bowl, beat eggs and then fold in pasta. Add sauce and fold in gently but quickly.
4Place in soufflé dishes and top with breadcrumbs.
5Bake at 350°F in tray with a little water bath until brown and bubbly, approximately 40 minutes.

Yield: 14 4-oz. portions
