|TABASCO® brand Green Jalapeño Pepper Sauce||---||1/4 cup|
|Chorizo, small-diced||2 lb.||---|
|Cotija cheese, crumbled||---||1 cup|
|Roasted corn||---||1 cup|
|Black beans, smashed||---||1 cup|
|Empanada dough||---||1 qt.|
Combine all ingredients except dough; mix well.
Roll out the dough to 1/4-in. thickness. Using a round 4-inch cutter, cut all of the dough into circles.
Place 1 heaping tablespoon filling into the middle of each dough circle; wet the edges of the dough with water. Create a beggar’s purse by sealing the top; cut off any remaining dough.
Preheat fryer to 350˚F; fry until golden brown.
