Peaches and Cream—Stuffed French Toast
|TABASCO® brand Chipotle Pepper Sauce||---||1 cup|
|Canned peach pie filling||10 lb.||---|
|Mascarpone or cream cheese||---||2 qt.|
|Ground cinnamon||---||3 Tbsp.|
|Granulated sugar||---||1/4 cup|
|Brioche, Texas-cut slices||---||80 ea.|
|Beer batter||---||1 gal.|
Strain peach pie filling, reserving just the peach chunks with minimal syrup.
Combine TABASCO® Chipotle Sauce, strained peach pie filling, mascarpone, cinnamon and sugar.
Place 2 to 3 oz. of filling on one side of a slice of bread and cover with a second slice.
Dip each sandwich into beer batter and fry in a preheated 350ºF fryer until golden brown.
Slice in half and serve.
