Ingredients Weight Measure
TABASCO® brand Chipotle Pepper Sauce --- 1 cup
Canned peach pie filling10 lb.---
Mascarpone or cream cheese---2 qt.
Ground cinnamon---3 Tbsp.
Granulated sugar---1/4 cup
Brioche, Texas-cut slices---80 ea.
Beer batter---1 gal.


Strain peach pie filling, reserving just the peach chunks with minimal syrup.

Combine TABASCO® Chipotle Sauce, strained peach pie filling, mascarpone, cinnamon and sugar.

Place 2 to 3 oz. of filling on one side of a slice of bread and cover with a second slice.

Dip each sandwich into beer batter and fry in a preheated 350ºF fryer until golden brown.

Slice in half and serve.
