Preparation
Heat a traditional waffle iron. Combine waffle batter with sage, bacon and cheese. Cook waffles; keep warm after cooking by covering with plastic wrap so they won’t break when folding them into wraps.
In a medium bowl, combine white barbecue sauce with shredded red and green cabbage; toss and set aside.
Lightly dress pulled smoked chicken with Kansas City–style barbecue sauce; keep warm.
In a small bowl, combine TABASCO® Chipotle Sauce and honey.
Onto the middle of each waffle, place an equal amount of macerated cabbage; cover each with an equal portion of chicken and drizzle chipotle honey on top (or reserve honey to serve separately for dipping). Fold waffles over filling like traditional tacos and serve.
